Coconut Macaroons
Coconut macaroons are a delightful treat that's perfect for any occasion, from casual gatherings to elegant dessert spreads.
These macaroons have a chewy texture on the inside with a slightly crispy exterior, thanks to the desiccated coconut powder.
You can customize these macaroons by adding chocolate chips, chopped nuts, or drizzling melted chocolate over the top for extra indulgence.
Ingredients:
2 cups desiccated coconut powder
1/2 cup sweetened condensed milk
1 teaspoon vanilla extract
2 egg whites
Pinch of salt
Instructions:
Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine the desiccated coconut powder, sweetened condensed milk, and vanilla extract. Mix until well combined.
In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.
Gently fold the beaten egg whites into the coconut mixture until fully incorporated.
Using a spoon or cookie scoop, drop rounded tablespoons of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
Bake in the preheated oven for 15-20 minutes, or until the macaroons are lightly golden on the outside.
Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Once cooled, store the coconut macaroons in an airtight container at room temperature for up to one week.
